What is protein bread and what makes it different?

As the name suggests, protein bread is a special type of bread that contains a particularly high percentage of protein. This protein content can range from 15 to about 30 grams per 100 grams of bread, depending on which flours we use. Compared to traditional mixed wheat or rye bread, which usually contains about 70% carbohydrates, protein-rich bread has a huge advantage.

While normal bread usually consists of 75 percent carbohydrates, the carbohydrate content of so-called low-carbohydrate bread is well below 15 percent. However, the fat content of typical protein breads with an average of 16 grams per 100 grams of product is many times higher than, for example, brown bread with only one gram of fat. Low carbohydrate bread (~ 260 kcal per 100 g) therefore has an average calorific value that is about 20 percent higher than that of conventional bread (~ 220 kcal per 100 g).

Most men and women do not reach the recommended reference value of 30 grams of fiber per day. Depending on age and gender, the average daily intake of fiber varies between about 22 and 28 grams. This-1 protein bread offers a higher fiber content than traditional breads, and a very low carbohydrate content.

How does low-calorie bread compare to traditional bread? The different nutritional composition of low-carbohydrate and conventional breads has implications for physiological processes in the body and practical applications of the products. The low carbohydrate content of protein bread, which is substituted for proteins and fats, means that consumption significantly lowers blood sugar levels. This effect is particularly apparent if you compare low-carbohydrate bread with white bread. White bread primarily contains short-chain carbohydrates, which cause a sharp rise in blood sugar levels and a correspondingly rapid insulin response. These nutritional values make carbohydrate-free bread ideal for use as part of a low-carb diet. This is especially true for athletes and people on diets.
